Larb is the national dish of Laos. It's basically a meat salad, its name in Lao translates to finely pounded or chopped meat - this could either be beef, chicken, pork, duck, or even fish. The salad is enhanced with a blend of fresh herbs and sprouts. A key ingredient is toasted sticky rice powder that lends a unique flavour and depth to this dish. Despite its salad-like nature, Larb can be had with sticky rice or stewed vegetables, although the latter was too much for my stomach to handle alone.
I tried Larb on my first day in Luang Prabang, Laos and it was spicy as hell, but paired well with Beer Lao, their local brew. Fun fact, Beer Lao ranks among the best beers in Southeast Asia.
